While I love to cook, I don’t bake too often– there’s usually too many variables that can go wrong. But when I do, I try to keep it easy so I can’t mess it up too badly. My kids love chocolate chip cookies but I always hate feeding them what’s in most of the recipes, so a few months back, I decided to make my own non-gmo chocolate chip recipe, and they taste delicious, the kids love them, and I don’t cringe when I see them eating chocolate chip cookies anymore!
I always try to sneak in chia seeds, flax seeds and hemp seeds whenever and wherever I can, so I usually pick two and grind them up to put in the cookies. My favorite are hemp seeds. Hemp seeds are high in protein and have all all nine of the essential amino acids and for my little one who doesn’t eat meat very often, this works great because I try to get in protein wherever and whenever I can. Hemp also has high amounts of fatty acids and fiber making it a well rounded nutritional add-on that helps to boost immunity, repair tissues, & protect cells, skin and organs. And it’s also easily digested so no tummy troubles. And in case you’re wondering, hemp seed does not contain THC (The active ingredient in marijuana). Hemp tends to have a nutty, earthy taste so if you don’t like that type of flavor, go light on the hemp and add some flax or chia in it’s place. I also add hemp seeds to smoothies, cereal, yogurt, homemade pizza (they never notice it- especially if you put it in the sauce or under the cheese!), salads, and my non-gmo pancakes.
Here’s the recipe for the cookies- let me know what you think!
1 cup of organic, grassfed butter (2 sticks)
3/4 cup organic cane sugar (I really like Zulka’s Pure Cane Sugar) *You can also substitute coconut sugar!*
3/4 cup organic brown sugar (Zulka’s also makes a great brown sugar- they are all non-GMO)
1/3 cup of organic hemp seeds ground (I usually use Nutiva Shelled Hemp Seeds)
2 tbsp flax seeds ground (I grind the hemp and flax (or Chia) together in the Nutribullet)
2 large organic eggs
2 teaspoons organic vanilla
2 1/4 cups organic flour
1 teaspoon baking soda
1/2 teaspoon sea salt
2 cups of milk chocolate or semi-sweet chips (I LOVE Ghirardelli milk chocolate chocolate chips, but I haven’t been able to verify if they are still non-GMO, so I stick with Trader Joe’s chocolate chips.)
Preheat oven to 375. Mix flour, baking soda and salt in a small mixing bowl. Then set aside. In a larger mixing bowl, mix cane sugar, brown sugar and butter on medium speed with mixer until creamy. Add the eggs, then add the vanilla and beat on medium until they’re mixed thoroughly. Slowly add flour mixture to the mix and continue to beat on medium speed. Once mixed thoroughly, add in the hemp and flax/chia mixture, then stir in chocolate chips – and I try to add almonds or walnuts too if I can sneak them in without the kids noticing.
Put on cookie sheet at least 2 inches apart and bake at 375 for 8-10 minutes until the edges are golden brown. Try not to eat the entire batch by yourself. 🙂 Enjoy!
