Cucumber Kohlrabi Salsa? Salad?

After my trip to the farmer’s market, where I bought the world’s largest kohlrabi, I had a ton of it left over so I came up with the most delicious salsa/salad.  Here’s the recipe:

photo (23)1 large cucumber diced (about 2 cups)(I used an organic japanese cucumber from the garden)

2 small kohlrabis diced (about 2 cups)

1/2 cup red onion diced

1 cup tomatoes diced

3 sprigs of dill

1 tsp garlic powder

1 tsp black pepper

1 tsp sea salt

1/2 cup organic sour cream

Mix them together! And you’re done!  I served mine with tortilla chips, and then we ended up just eating it as a salad with forks- it was soooo good!
